Baking oatmeal cookies for me have always been a nightmare!! Until today! I don’t know if it was the Imagine Dragons music I was listening to while baking or is this a miracle recipe, but today I manage to bake BY FAR THE BEST oatmeal cookies I’ve ever tasted. Crunchy on the outside and chewy on the inside… and of course a super healthy, fun, and quick-to-do snack. Here’s the recipe:
(About 24 cookies)
•3 tablespoons butter, room temperature
•1⁄2 cup brown sugar
•1⁄4 cup honey
•1 tablespoon water
•1⁄2 cup all-purpose or whole wheat flour
•1⁄2 teaspoon salt
•1⁄4 teaspoon baking soda
•1 1⁄2 cups rolled oats
•Sliced almonds and fresh blueberries to taste (I LOVE blueberries so you do the math)
•Preheat oven to 350 degrees F.
•Mix together the butter, brown sugar, honey, egg and water thoroughly.
•Add flour, salt, and baking soda to the wet and mix. Then add oats and mix again.
•Add sliced almonds and blueberries and lightly combine.
•Drop tablespoonfuls onto the cookie sheet leaving a few inches apart from each one.
•Bake for 15 minutes. Let them cool and enjoy!
