So lately I’ve been obsessed with ‘What I Eat in a Day’ videos. I love to see what other people eat! (that’s not creepy). Any who, I decided to give it a try. I bet there’re like a thousand people dying to know what this gal eats…
And no, I don’t eat by portions nor count calories. I just try to eat healthy, fresh, organic foods.
For breakfast I had 2 scrambled eggs, potatoes, and avocado. The ‘hardest’ part were the potatoes, like, raise your hand if you hate peeling potatoes. Worst cooking-related task ever. (Drama queen alert)
For snack I had an Açaí bowl, and I’m gonna be honest here, I don’t usually eat Açaí. In fact, I don’t like Açaí that much *gasp*. But I know it’s a healthy snack so I blended a Sambazon Açaí pack with frozen berries, bananas, and almond milk. Then transferred the mix to a bed of gluten free granola and topped it with melted peanut butter (best thing ever, you have to try it), fresh strawberries, dark chocolate chips, and hazelnuts.
The grain bowls have become an ‘insta-goals-on point-yasss-‘ trend lately. For us, the lazy AF squat means “perfect! the least dishes I have to wash the better”. I decide to make half of a Tasty Bite Brown Rice & Lentils package for my base. And let me tell you something, as a Puerto Rican, I consider myself an expert on ‘rice and beans’ and this ‘gringos’ version taste amazeballs. Anyways, as my little sides I had a roasted chicken sausage link, avocado, pico de gallo, carrots, and the breakfast leftover potatoes that looked and tasted awful so I did’t eat them. #foodporn #foodgoals
I know, that’s A LOT of pasta. I have a feeling the portions get bigger by the meal…oh well. So for dinner I had spaghetti with chicken meatballs and a simple green salad.
I don’t have dessert every single night but today I wanted to try a recipe I found on Pinterest: homemade Nutella. I don’t like Nutella that much (I prefer peanut butter, thought I don’t think there’s a competition between Nutella and PB…). Moving on, for dessert I had Coconut Bliss Dark Chocolate vegan ice cream (taste like Kate McKinnon as Hillary Clinton…and JB. Too good for words). I topped that with Alec Baldwin as Donald Trump, I mean, strawberries, walnuts, and the homemade Nutella. Yes, it was THAT good.
